Cooking Lessons with Wineat the home of Chef Ed & Anne Lundstrom
3 Saturdays from 6pm to 10pm over a 2-3 month period at the home of Chef Ed and Anne Lundstrom, founders of Fermentations.
These 3 days will introduce you to some of the Grand Sauces such as demi-Glace and small sauces from them. Many of these sauces will be taught to you including cranberry-demi, blueberry-demi, Marsala and others. In the beginning, we will start with the basics, preparing stocks, the foundation of sauces. Each day we will build on what you have previously learned. We will be using stocks and sauces in preparation of classic dishes such as Coquille St Jaques, Duck Confit, Coq Au Vin and Salmon En Papillote. These classic dishes will teach you the different cooking methods such as sautee’ing, braising, en papillote, and pairing cuts of meat or other protein with cooking methods to maximize flavor and tenderness. Each day includes an appetizer and dessert which you will also taste. You will not go away hungry! Since fine wines are such an enhancement to any meal we will also pair wines with the food we cook. We will explain the reason certain wines work with various foods. Bring your appetite!
